Make sure that the dough you press with a clean, dry palm should not stick to your hands. In general, that's all. The original recipe, given to us by the teacher of works, stated that it would not be a bad idea to put the dough in the refrigerator for half an hour, but I neglect this rule, everything rolls out perfectly for me anyway.
