Sour cream softens the meat and makes it more tender and juicy. At the same time, meat juice, mixing with the sauce, gives it a rich taste, which is also important. There are more than a dozen recipes for sour cream sauce for meat. You can add other components to it, for example, mustard, garlic, tomatoes, herbs, mushrooms, etc.

Be sure to try all options. As an example, you can take the following variations in cooking pork, beef, poultry and rabbit.

Beef Stroganoff

Traditionally, meat in sour cream sauce, which is cooked in a frying pan, is cut into small pieces. The classic recipe is beef stroganoff. This is often pork or chicken, cut into thin short strips, fried in a frying pan and flavored with sour cream.

Preparing this incredibly tasty dish will not take much time. In addition, you will need a simple set of products:

  • butter;
  • flour;
  • sour cream;
  • pork;
  • spices.

Cut the pork into thin slices and pound lightly. Then cut it into small strips and fry in a heated frying pan. When it turns golden brown, add chopped onion. After a minute or two, move the pork and onions slightly to the side. Prepare sour cream sauce for our meat.

To do this, melt a piece of butter in a cleared area of ​​the frying pan. Add a little flour to thicken the gravy. According to the principle of preparation, beef stroganoff is a little reminiscent of bechamel. When the butter and flour are fried, add sour cream. Stir everything until smooth and combine with the rest of the products.

Cover everything with a lid and leave to simmer. 5-7 minutes before readiness, season with black pepper, nutmeg and salt. You can also add a couple of allspice peas.

Meat stewed in sour cream with mushrooms

Another popular recipe is stew with mushrooms. You can use pork or beef, or any poultry. This is also a very easy dish to prepare. It will require meat cut into pieces and the same amount of mushrooms.

Fry the pieces of meat, then add the onions and mushrooms. When the liquid has almost completely disappeared, add sour cream and leave to simmer until tender over very low heat, adding water if necessary.

Stewed rabbit meat in sour cream sauce with wild mushrooms is very tasty and delicious. You can use assorted: chanterelles, white mushrooms, honey mushrooms, boletus, milk mushrooms, etc. If you can’t get wild mushrooms, you can use regular champignons or oyster mushrooms.

First, soak your rabbit in water for 15 minutes to wash off any excess residue. Then cut the carcass into portions. Heat a frying pan and fry all parts in butter.

Separately, heat the butter in a saucepan and fry very finely chopped onions and coarsely chopped mushrooms in it. Ideally, leave small mushrooms intact. When the liquid has subsided, transfer the mushrooms to the frying pan for the rabbit.

You can add a little wine for flavor. When the alcohol has evaporated, add sour cream. If necessary, add water to prevent it from burning. Seasonings suitable for rabbit include rosemary, oregano, juniper berries, cranberries, savory, garlic, and celery. Salt and pepper it towards the end of the stew.

Tomato-sour cream sauce and meatballs

You can cook meat in the form of meatballs in tomato-sour cream sauce. To do this, you need to divide the preparation into three stages: preparation, frying and stewing. The recipe for sour cream filling with meatballs requires an ingredient such as rice. It needs to be boiled in unsalted water until half cooked.

Grind the minced meat and add a little onion and grated carrots to it. Salt, pepper, mix with rice and egg. Then fry until golden brown. You can also make a baked dish.

Prepare tomato-sour cream sauce. To do this, mix a glass of tomato juice and a few tablespoons of sour cream. Pour this mixture over the meatballs placed in the pan and let them simmer. When the tomato-sour cream sauce boils away a little, the dish is ready. You can add red pepper for spiciness.

Garlic sauce


Try cooking meat in a spicy sour cream and garlic sauce. The principle of its preparation is not much different from the traditional one. The main difference is the gravy recipe. You need to add a few cloves of garlic, or rather, their juice. This must be done during the stewing process.

It is best to cook chicken in garlic sauce. If you wish, you can add chopped herbs: cilantro, dill, parsley, basil, a little leaf celery.

Mustard-sour cream sauce

Another delicious recipe: meat cooked in mustard-sour cream sauce. It is best to use pork, as it tastes perfect with this dressing. In order to prepare mustard-sour cream sauce, you will additionally need several ingredients.

First, fry the meat with chopped onions. Mix a glass of sour cream with a few tablespoons of mustard, salt, pepper and paprika (optional).

To add extra softness and tenderness with a pleasant taste, the pork can be marinated overnight in mustard. After it has browned and softened slightly, pour mustard-sour cream sauce over it and simmer for 10-20 minutes.

Bake in the oven

If you want to do something unusual and festive, you can try cooking baked meat in some kind of sour cream sauce. Come up with your own recipe and feel free to experiment with baking methods and combining ingredients.

You can cook pork chops accompanied with mustard and sour cream. Take the meat and cut it into portions. Then beat them off on one side and brush with mustard. After 5-10 hours you can continue cooking. Fry the chops on a grill pan. Next, put the meat in a mold and fill it with the following mixture: sour cream, cream, mustard and seasonings. Place in the oven for 40 minutes.

Another excellent dish option is baked meat in a pot with tomato and sour cream sauce. To do this, cut the pork or lamb into large cubes. Fry them over high heat to seal in the internal juices.

Transfer the pieces into a pot, adding chopped carrots and onions. Then pour seasoned tomato juice over everything, and add sour cream and tomatoes on top. Place the pot in the oven for half an hour or more, depending on the degree of doneness of the meat.


A simple recipe for preparing delicious meat. After trying it once, I added meat in sour cream sauce to my favorite recipes.

Compound:

  • Meat (beef, pork or veal) - 600-800 g
  • Onions – 2 pcs.
  • Flour – 1 tbsp. spoon
  • Sour cream – 250 g
  • Dried dill - to taste
  • Pepper - to taste
  • Salt – 1 teaspoon

Preparation:

Peel the onion, finely chop into cubes and fry until golden brown over medium heat for 15-20 minutes, stirring occasionally.

While the onions are frying, prepare the meat. Wash it and cut into strips.

Increase the heat in the frying pan with onions to maximum and add the meat to the onions. Fry the meat for about 5 minutes, stirring constantly, until the meat turns white. When the meat turns white, pour in a glass of hot boiled water, stir everything and bring to a boil.

Reduce heat to slightly above minimum, cover the pan with a lid and simmer until the meat is soft, about 1 hour. If the water evaporates quickly, you can add more.

Prepare sour cream sauce. For the sauce, you need to mix sour cream and flour, but no matter how you get lumps, you have your own tricks. First mix the flour with 2-3 tablespoons of boiling water, mix the mixture thoroughly and only then add sour cream.

After stewing the meat for an hour, you can add the sauce, but to prevent the sour cream from curdling, first mix it with 2-3 tbsp. tablespoons of boiling water, and then add to the meat. Salt and pepper the meat, add dried dill. Mix everything thoroughly, cover the pan with a lid and leave for another 5 minutes.

Recipe pork in sour cream sauce:

Rinse the pork well with water, dry it with a paper towel and cut into small pieces.

Salt the meat and marinate in your favorite spices. Leave for half an hour.


Meanwhile, peel and rinse the onions. Cut it into rings or half rings.


Heat a frying pan with a small amount of vegetable oil, add the meat and fry over medium heat, stirring occasionally. Bring the pork until half cooked and add the onion to the pan, stir and continue frying for another 5-7 minutes.


Then transfer the meat and onions to a saucepan or small saucepan with a thick bottom. Add a little water so that the meat is not completely covered. If desired, you can add bay leaf and allspice. Simmer the meat over low heat for about 30 minutes.


While the pork is stewing, you need to prepare the sour cream sauce. To do this, fry the flour in a dry (!) frying pan until a characteristic smell appears.


Then slowly pour in the sour cream and reduce the heat to low (if you are using full-fat sour cream, you can dilute it a little with water). To taste, you can add dried parsley or dill to the sour cream sauce. Cook for a couple of minutes, stirring constantly, until thickened.


Pour the finished sour cream sauce into the pan with the pork, mix well and continue to simmer for about 10 minutes. At the end of cooking, add chopped garlic, cover with a lid and let it brew for a while.

Meat in sour cream turns out tender and juicy if added at the right time. Under no circumstances should you stew beef with a dairy product for a long time, otherwise you can ruin everything. Here is the classic recipe for a universal meat dish with onions and white gravy. It goes well with vegetable and cereal side dishes and pasta. We choose fresh meat that has not been in the freezer, otherwise the beef stewing time will increase by one and a half times.

Ingredients

  • 700 g beef;
  • 200 g sour cream;
  • 170 ml water;
  • 2 onions;
  • 40 ml oil;
  • 25 g dill;
  • 2 tsp. flour.

Step-by-step recipe for classic beef in sour cream

Wash the beef, use the soft, boneless part. Cut the piece into cubes no larger than two centimeters. Let's heat the oil. It is important that it warms up well. Place the meat, fry for a minute on maximum heat, stir several times.

Turn it to medium level and cook for a couple more minutes; juice will begin to release from the meat. It's time to cover it. Reduce the heat again and simmer for 45 minutes. There is no need to add anything. Open and stir occasionally. Make sure the beef doesn't burn.

Cut the onion into half rings, open the meat, by this time almost all the juices have already evaporated from the beef. Fry together with the vegetable until it is transparent, only after that the dish can be salted.

Stir sour cream with water and flour until smooth. You can add salt here, like other spices. Pour over the meat, cover and simmer the beef fried with onions for another fifteen minutes. Add dill, stir.

The gravy will be even better if you add warmed milk or cream to the beef instead of regular water, or you can use beef or other meat broth.

Option 2: Quick recipe for beef stewed in sour cream (with prunes)

This beef option is for those who cannot stand at the stove for long. The active cooking time is about a quarter of an hour, then we put everything in the oven and cook for about another hour. This option is notable for the fact that you can use pots, a cauldron or a saucepan with a lid. Unscrew the plastic handles. The highlight of this recipe is the prunes.

Ingredients

  • 1 kg beef;
  • 4 onions;
  • 150 g prunes;
  • 300 g sour cream;
  • 1 tsp black pepper;
  • vegetable oil.

How to quickly cook beef stew in sour cream

We cut the washed beef into bars or make neat cubes from the meat, the size of prunes or a little larger. Place in a hot frying pan and fry for five minutes. The fire is strong and we do not provoke the release of juices. Transfer to a bowl or cauldron.

We cut the onion into large rings, send it to the frying pan after the meat, fry for two minutes, send it to the beef. Add washed prunes, black pepper, add sour cream and salt.

Mix everything well and place in pots. Or leave it in the cauldron and cover. Place in the oven for about an hour. If the meat is from a not quite young cow or bull, then simmer for one and a half or even two hours. Cooking at 180 degrees.

You can stew beef this way simply with onions without prunes, add carrots cut into slices and bell peppers.

Option 3: Beef stewed in sour cream “Beef Stroganoff our way”

Recipe for very tender stewed beef in sour cream and cream with the addition of alcohol. You can use cognac, but regular vodka is ideal. In total you will need 50-70 grams. Thanks to alcohol, the meat will turn out incredibly tasty and will surprise you with its tenderness.

Ingredients

  • 1 kg beef;
  • 50-70 ml vodka;
  • 2 onions;
  • 150 ml cream;
  • 220 g sour cream;
  • 50 ml oil;
  • salt pepper.

How to cook

We cut a piece of beef into slices of a centimeter or a little thinner. Then we chop each layer into strips of half a centimeter. You will get a thick straw, the length is arbitrary.

Heat the oil until almost smoking. Add the beef, cook until golden brown, stir, wait for the juices to appear. As soon as they begin to form in the pan, reduce the heat and add vodka. Stir one last time, cover, and simmer the meat in vodka for exactly one hour. If young veal is used, then 35-40 minutes is enough.

Open the pan, stir the beef, check. If the meat has softened and is almost ready, then add onions cut into cubes or strips. We evaporate the remaining moisture, fry the meat again along with the vegetable.

Combine sour cream and cream, add salt and pepper, you can add a spoonful of mustard. Pour in the beef. Stir, let simmer a little in sour cream, fifteen minutes is enough.

There is no need to be afraid of alcohol in such dishes; the alcohol will evaporate and the taste will also disappear during the cooking process.

Option 4: Beef stewed in sour cream with champignons

Mushrooms in sour cream with meat is a very tasty and satisfying dish that will be an excellent addition to any, even the most modest side dish. Beef tenderloin and fresh champignons are used for preparation here. You can also use frozen mushrooms, but it will take longer to evaporate the water from them.

Ingredients

  • 500 beef;
  • a glass of sour cream;
  • 300 g champignons;
  • 30 ml vegetable oil;
  • 40 g butter;
  • 2 onions;
  • 2 cloves of garlic.

Step by step recipe

We take fresh beef, wash the piece, and cut it into centimeter-sized slices. Then onto small bars. Heat the vegetable oil, add it, fry it, then cover it and let the beef simmer for about an hour until almost soft.

It is better to fry mushrooms in butter or take a mixture of it with sunflower oil. Place fats in a frying pan and heat. We wash the champignons, cut them into slices, and add them afterwards. Cook without a lid until the pieces are browned. In about fifteen minutes they will be ready.

Open the meat, add chopped onion, stir, let it fry a little, then add the champignons. You can transfer the beef to them, this is not so important, it all depends on the size of the dish.

Squeeze the garlic into the sour cream, add salt, and you can add ground pepper. Stir and add to the meat and mushrooms. We leave the beef to stew in sour cream for another fifteen minutes, be sure to cover.

If you need a dish with a lot of gravy, you can use two glasses of sour cream or dilute it with milk or cream. Sometimes mixed with tomato juice, it also turns out delicious.

Option 5: Beef stewed in sour cream (with potatoes)

An economical dish that doesn't require much beef. With potatoes everything turns out satisfying, rich, it goes well with sour cream. You can also cook in cream. For frying, use any oil of your choice.

Ingredients

  • 700 g potatoes;
  • 450 g beef;
  • 2 onions;
  • 250 g sour cream;
  • 1 bunch of dill;
  • 70 ml oil;
  • cheese optional.

How to cook

We start with beef, as it will need to be stewed well. Cut the washed meat into strips, put it in a frying pan and lightly fry. Then cover and cook until soft in its own juices, which will be released. To prevent them from boiling over, turn the heat on low.

Peel the potatoes. We cut the washed tubers into slices or strips, but not very thinly, otherwise the vegetable will become soggy during the stewing process. Pour some oil into another frying pan and heat it up. Add the potatoes, fry for a few minutes until lightly browned, stir, and do not cover.

Peel the onion, cut it, add it to the potatoes, let it fry a little more, then transfer it to the beef. Add spices to the meat, add all the sour cream at once, no need to add any liquids, stir.

Cover the frying pan, turn the heat to low, and leave the beef in the sour cream to simmer for about half an hour. The pieces should be well soaked. Sprinkle the finished dish with dill. You can mix chopped herbs with grated cheese, three spoons is enough, it will also turn out very tasty.

Beef goes well not only with potatoes. Similar stews can be made with zucchini, pumpkin, eggplant, green beans, and even a mixture of vegetables.
